Get Your Kids REALLY Cooking: Make Curiously Refreshing Cupcakes!

When kids are cooking, they’re focused on the fun of it – yet they’re learning so much. It starts with sensory exploration; colors, textures and flavors. As they grow, following recipes teaches reading and math skills, telling time, and even problem solving, while helping kids take their first steps toward a lifetime of healthy eating habits. And since kids are more likely to eat something when they’ve had a hand in making it, it’s smart to start them young. 

With the falling of the leaves, comes the season of baking! What better way to bring the family together than with the aroma of freshly baked pies, cookies, muffins, cupcakes and other pastry delights! We at Curious Chef® believe that even your youngest child can be involved in the baking process, all the while learning some great skills and creating memories that will last a lifetime. Enjoy your first memory of this baking season with this easy-to-follow recipe.

Curiously Refreshing Pink Lemonade Cupcakes

Cake Recipe:
• 1 box yellow cake mix
• 3/4 cup frozen pink lemonade concentrate
• 1/2 cup water
• 1/3 cup vegetable oil
• 4 egg whites

Have an adult preheat oven to 350 degrees. Line a muffin tin with Silicone Liners (Note: you will need 24 total liners). Combine all of the ingredients in Three-Quart Mixing Bowl. With an adult’s help, use an electric mixer, beginning by mixing on low for 30 seconds, and then increase the speed to medium for another minute. Divide the batter evenly, filling the liners about 2/3 full.  Bake the cupcakes for about 25 minutes, or until cake tester comes out clean. Allow the cupcakes to cool before frosting.

Pink Lemonade Butter Cream Frosting Recipe:
• 3 cups confectioners’ sugar
• 1 stick unsalted butter (room temperature)
• 2 tbsp frozen pink lemonade concentrate
• Pinch of salt
• Red/Pink food coloring

Combine all ingredients in a two-quart mixing bowl. With an adult’s help, use and electric mixer, beginning by mixing low until combined. Once combined, mix on medium-high until the frosting is light and to the consistency desired. Add a few drops of red or pink food coloring to the frosting and mix thoroughly. Using a silicone Spatula, place frosting in the frosting dispenser and decorate using the tip of your choice! Enjoy!
